Misatonishiki, the sake rice that Harukasumi is most passionate about, is a cross between Yamadanishiki and Miyamanishiki rice and is grown in very small quantities in Akita Prefecture, but it is characterised by its dense rice flavour, subtle sweetness and refreshing acidity. In recent years, Haruka has evolved in a modern way to produce umami, with an impressive rich flavour reminiscent of Riesling Spatelese from Germany with a slightly higher sugar content, and a refined acidity that enhances its presence as a food sake.
