Alice et Olivier de Moor, Chablis Premier Cru "Vau de Vey" AOC - natural dry white wine from Chardonnay grapes, which is grown on the left bank of the Serain, in the Premier Cru vineyard "Vau de Vey" (its name means "small valley "in the local dialect). The de Moores acquired a 0.92 hectare plot here in 2017. The site was planted in 1983 and is very steep and has a southeast exposure. The vineyard is certified organic and harvested by hand. The fruits are peeled from the stems and pressed gently. Spontaneous fermentation with local yeast takes place in old Burgundy barrels. At the end of malolactic fermentation, the wine is aged for almost a year on the lees without sticking and pouring. Bottling is carried out without preliminary purification or filtration, with a minimum addition of sulfur.
