Winemaking: The very first Méthode I’ve attempted to make; it’s been a hell of a learning curve. I purposefully didn’t want to make Pétillant Natural, and instead employed the traditional Champagne winemaking method. It was a very last moment decision to turn into Méthode; the forecast for rain was on the cards and the fear of botrytis set in. So, I decided to pick earlier than I would for a still wine and this is the result. Hand-picked, whole bunch press and wild fermented in one old puncheon with regular lees stirring. Fermented to dry and aged on gross lees for 10 months before being bottled. Left on lees in bottle for another 10 months before being disgorged.
Winemakers tasting notes: Fine delicate bubbles, bursting with acidity and freshness. A true celebration wine for any special occasion. Underlying notes of brioche retains intrigue, turning this from a smashable wine into something a bit more refined.
