Around the year 2000, during our journey to find the right grape varieties for suitable locations, we encountered the wines of the Friuli region (Italy), Jura region (France), and the amber wines of Georgia. The way the grapes, long cultivated in those regions, fully expressed their unique characteristics inspired us. At that time, most white wines made from the Japanese native grape variety, Koshu, were considered light, pale, and easy to drink, with the grapes themselves perceived as pale and soft in flavor. However, we found that Koshu grapes possess tannins and are very robust. Wishing to bring out the rich flavors of the Koshu grape, we started making this wine in 2004, aiming to extract as much aroma and essence from the grapes as possible.F.O.S. stands for Fermented on Skins. Every year, we ferment the grapes with their skins and seeds, similar to how red wine is made. In recent years, we've also been experimenting with using Mino ware clay pots. Through this trial and error process, we create this wine. The 2021 Koshu F.O.S. features a deep color, complex aroma, and pleasant tannins for you to leisurely enjoy.

A vineyard was cultivated on a steep mountain slope by junior high school students from a special school in Ashikaga City, Tochigi Prefecture, and their teacher. At the foot of this vineyard, the designated support facility for persons with disabilities, Kokoromi Gakuen, was started. Coco Farm & Winery Ltd. was created with the aim of enabling everyone, including people with intellectual disabilities, to demonstrate their vitality and strength.
