Shindo Sake Brewery was founded in 1868 and has a brewery in Yonezawa City.
The brewery's traditional handcrafting techniques have been stubbornly maintained since the first generation, and the brewery's toji (master brewer) and brewery staff put their heart and soul into the brewing process, which continues to the present 10th generation, using high purification of carefully selected sake rice and water from the Azuma mountain range.
The brewery rethinks the often forgotten meaning of 'locally brewed sake', and under the theme of 'genuine sake sought by locals', the brewery draws out the true nature of 'locally brewed sake' and the latent taste of sake with its blessed environment and unconventional, free thinking. This is not only the "real local sake" of the Gasanryu style, which does not go against the changes in diverse food culture, but also a new sake culture that fits in with it.

 

Kisaragi is the starting point of the Gazanryu series, a "crystallisation of Yamagata" brewed with Yamagata yeast from Dewasansan, a rice suitable for sake brewing that is the pride of Yamagata. The rice is grown by the brewery's own rice farmers and refined to 50%. It has a discreet yet elegant ginjo aroma and a gentle, smooth mouthfeel, with a soft aroma that spreads softly in the mouth.
