The Bekkaku project brought together enthusiastic young people from various departments of Hakutsuru Sake Brewery, who were united in their desire to "create a sake that will surprise the world". Hakutsuru Nishiki, a sake rice produced in Hyogo Prefecture and developed in-house by Hakutsuru Shuzo, is used 100% and stored for a short time in Hyogo Prefecture cedar barrels to give the sake a thicker, more complex flavour. 'Komorebi & Mushimegane' through the trees is characterised by its lemongrass-like aroma and refreshing acidity, making it a perfect match for pickles and white fish carpaccio. Sake beginners and enthusiasts alike are invited to explore the new world of sake.
