Hito to Ki to Hitotoki is sake brewed in large traditional wooden casks. Wooden cask-brewed sake, which was very common half a century ago, is rarely seen anymore. Imayo Tsukasa Sake Brewery decided to install two new 4,000-litre wooden vats made of Yoshino cedar, out of a strong desire to preserve the culture of large wooden casks for the next 100 years and to ensure that the excellence of wooden cask brewed Sake is not lost. The result is Hito to Kito Hitotoki.
