Ine Mankai Ancient Rice Sake is brewed by Mukai Shuzō in the fishing town of Ine, Kyoto Prefecture, using an ancient strain of red rice (Murasaki Komachi) alongside locally grown white rice. The use of red rice — historically cultivated for traditional celebrations but seldom seen in sake — gives this sake its distinctive hue and aromatic presence. While still rooted in traditional craftsmanship, this sake delivers a well-balanced interplay of sweetness and acidity, with hints of sweet-tart cherry and pomegranate that unfold gently on the palate. Its savoury umami richness and nuanced fruit-like aromas make it versatile with a range of food, from hearty dishes to lighter fare.
