Senkin Retro Ichishiki Hiire is crafted by Senkin brewery in Sakura City, Tochigi Prefecture, as part of the “Edo-gaeri” (return to Edo) concept that honours classic sake profiles while using contemporary insight. The name “Retro” reflects a nostalgic return to the flavour profile reminiscent of Senkin’s style from about 20 years ago, marked by a sweet-sour balance and approachable structure. Brewed using rice grown in the brewery’s own terroir, including Omachi and Yamada Nishiki, and finished with pasteurisation (hiire), this sake exhibits a smooth, light texture with gentle acidity and a subtle citrus fragrance on the finish. Its clarity and delicacy make it enjoyable chilled or at room temperature.
