The Bekkaku project brought together enthusiastic young people from various departments of Hakutsuru Sake Brewery, who were united in their desire to "create a sake that will surprise the world". Hakutsuru Nishiki, a sake rice produced in Hyogo Prefecture and developed in-house by Hakutsuru Shuzo, is used 100% and stored for a short time in Hyogo Prefecture cedar barrels to give the sake a thicker, more complex flavour. 'Snorkel under the sun'. has a citrus peel-like aroma and bittersweet flavour, making it a perfect accompaniment to sausages and pizza.
