Noumin Dry "Farmer's Dry" is a charming Japanese white wine. The crisp acidity of grapes grown in the cooler climates of northern regions and high-altitude vineyards lowers the pH, stabilizing the wine and maintaining its health. The 2023 Farmer's Dry is a blend of distinctive aromatic and acidic white wine grapes grown by skilled farmers, including Müller-Thurgau, Kerner, Bacchus, Silvaner from Hokkaido, and Sauvignon Blanc from Nagano. It also includes Müller-Thurgau and Bacchus from the Coco Farm & Winery's Vineyard Liberté. In the winery, we aimed for simplicity in the winemaking process, lightly pressing the grapes to remove the skins and seeds, and fermenting the juice naturally with wild yeast and wild lactic acid bacteria, primarily in stainless steel tanks. After blending, the wine was aged in tanks, lightly filtered, and then bottled.This wine is fresh, clean, and pure, with no off-flavors, making it a crisp, dry white wine. It also has a gentle taste that pairs well with fresh oysters, sushi, and other Japanese cuisine, complementing the diverse and vibrant Japanese dining table.

【Coco Farm & Winery】
A vineyard was cultivated on a steep mountain slope by junior high school students from a special school in Ashikaga City, Tochigi Prefecture, and their teacher. At the foot of this vineyard, the designated support facility for persons with disabilities, Kokoromi Gakuen, was started. Coco Farm & Winery Ltd. was created with the aim of enabling everyone, including people with intellectual disabilities, to demonstrate their vitality and strength.
