Frederic Savart produces incredible Champagne from tiny organically-farmed parcels in the villages of Ecueil and Villers-aux-Noeuds. L’Ouverture is a brilliant three-vintage blanc de noir fermented in a combination of stainless steel and neutral barrels, before aging under cork. It is medium to full-bodied, graceful and superbly balanced, really emphasising the Savart style. Flavours centre on orchard fruit, white flowers and pastry.
