Crafted by Shirataki Sake Brewery in Echigo Yuzawa, Niigata, Kimoto Nigori Sake by Jozen Junmai brings together two expressive sake styles: traditional kimoto brewing and the soft, cloudy texture of nigori sake.
Kimoto is a time-honoured brewing method in which natural lactic acidity is carefully developed during fermentation, adding depth, richness, and a refreshing tang to the sake. In this bottle, that character is presented in a playful and approachable way, with a creamy nigori texture and a softly sweet flavour profile.
The aroma is gentle, with notes of steamed rice, yoghurt-like lactic sweetness, and subtle grain. On the palate, it is smooth and generously sweet, balanced by vivid acidity that keeps the finish clean and refreshing. Its cloudy texture gives the sake a soft, creamy feel, while the kimoto acidity adds lift and complexity.
Best served well chilled. Enjoy with miso-marinated pork, buttery scallops, avocado with soy-koji, chirashi sushi, sesame crackers and nuts, or even rare cheesecake and chocolate cake.
