The base ingredient of Kinmiya Shochu is molasses derived from sugarcane, which makes it essentially the same as other Ko-rui (distilled) shochu—clean and neutral in character. However, it does have a subtle sweetness that sets it apart from the others. I can’t help but think that this might be the key to its appeal! While there’s a slight aroma of alcohol, that gentle sweetness makes it surprisingly enjoyable even when served on the rocks.
