Cécile Tremblay is the great-granddaughter of Édouard Jayer, who founded the estate in 1921 and was the uncle of the legendary Henri Jayer—making Cécile Henri’s grandniece. The domaine covers a modest 6 hectares. For many years, Édouard’s daughter, Renée Jayer, leased the vineyards to Michel Noëllat, who paid the rent in wine. In 2000, Cécile began participating in the harvest herself, and by 2003, when half of the 3-hectare lease expired, she officially took over the vineyards.

Long before her stewardship, the vineyards had been cultivated under strict lutte raisonnée principles, avoiding excessive chemical use. Today, Cécile is celebrated for her commitment to organic viticulture and has become one of Burgundy’s most sought-after and admired winemakers. Her wines are coveted by collectors and enthusiasts around the world for their purity and expression of terroir.
 
Chambolle-Musigny “Les Cabottes” is a blend of three parcels with vines averaging 30–40 years of age, covering 0.7 hectares. The wine is aged for 18 months in oak barrels, with around 20% new oak. Produced using lutte raisonnée methods that minimize chemical intervention, it embodies a natural purity and delicate balance. The village of Chambolle-Musigny is renowned for wines of elegance and aromatic depth, and “Les Cabottes” perfectly captures this signature refinement.
