The idea was to create the best sake with all the aroma, delicacy, fullness and lingering aftertaste of Junmai Daiginjo, the highest category of sake, by achieving a rice polishing ratio of 8%, which has never been achieved before. The result is this Tatenokawa 'EXTREME' Kyokugen. The rice is polished to a diameter of just 2 mm, resulting in the ultimate transparency and an exquisite harmonious balance between the rice's flavour and richness. The taste has a character that is worthy of being called the "Jewel of Sake". Enjoy the ultimate in sake.
