Vineyard in Yoichi, Hokkaido, the northern island of the Japanese peninsula. The vines enjoy a relatively dry climate in summer, yet during the winter months are covered in one metre of snow, protecting them from the region’s harsh cold.
 
Vinification: Handpicked grapes, 40-day maceration in vats, with 95% whole bunches. Matured for one year in French oak barrels that have seen several wines, with an additional 5% matured in new oak barrels.
