This does not always mean the sake must be served hot. Some winter sake can be enjoyed slightly chilled or at room temperature. However, many styles reveal greater umami, softness, and aromatic depth when gently warmed.


In Japan, warmed sake is known as kanzake. It is not simply “hot sake,” but a careful way of serving sake at different warm temperatures. Even a small change in temperature can alter the aroma, mouthfeel, sweetness, acidity, and finish.

Key Characteristics of Winter Sake
