This is a project started by Hiro on his own initiative to see what happens when natural wines are aged properly. Due to the small quantity, it is not easy to find aged New World natural wines. I think it is quite interesting. This is one that I would definitely recommend natural wine lovers to try!
This wine, which was slightly sparkling when it was first made, is available in limited quantities. The next time it will be released from the cellar will probably be in five years.
