Often regarded as the benchmark expression of Dauvissat’s Premier Cru style, La Forest is the wine in which depth, restraint and Chablis tension seem to meet most naturally. The 2023 has been singled out as one of the great successes of the vintage, combining oyster shell, lemon zest, white flowers and iodine with firm chalky extract. There is richness here—hints of ripe citrus, subtle exotic fruit and hazelnut—but it is held in check by electric acidity and a long saline finish. Powerful without heaviness, it feels like a grander Chablis speaking in a calm, precise voice.
